This bean, known as the Cerrado Brazil screen 17/18, is the second-largest possible bean size. With a consistent size ranging between 6.75 and 7 millimeters, these large, uniform beans ensure even roasting, allowing for a balanced and harmonious flavor profile.

Process – Natural 

Brazil Cerrado Mineiro 17/18 undergoes a Natural processing method, a technique widely used in the Cerrado Mineiro region. In this process, ripe coffee cherries are harvested and dried with the fruit intact, either on the tree or on drying patios. This allows the beans to absorb natural sugar and fruit flavors, resulting in a rich, sweet profile with a medium body.

Due to the moderate elevations of the region, these coffees have lower density, requiring a gentler roast approach. To prevent scorching, roasters use a lower charge temperature and gradual heat adjustments. Extending the drying phase enhances the syrupy mouthfeel and highlights its chocolatey sweetness.

Precision in harvesting and drying preserves the unique characteristics of Brazil Cerrado 17/18. Sample roasts and cupping sessions further refine the optimal roast profile, maintaining flavor consistency across its screen 17/18 beans (6.75 to 7 mm), allowing for even roasting.

About the Farm 

Cerrado, located in Minas Gerais, Brazil’s largest coffee-producing state, has been a key region for coffee cultivation since the 1980s. The industry’s expansion here was largely driven by the devastating black frost of 1975, which forced growers from Paraná to relocate north to Cerrado and other parts of Minas Gerais.

Today, over 4,500 growers cultivate coffee across 175,000 hectares of farmland, yielding approximately 5.5 to 6.0 million bags annually. The region’s fertile soil, known locally as “Terra Roxa” (Red Earth), combined with consistent rainfall, high daytime temperatures, and dry winters, creates the ideal conditions for producing exceptional coffee.
