Harvest And Initial Processing

Optimal Flavor Development

At Soul Café Coffee Roasters, quality control begins at the source. Each coffee cherry is carefully hand-picked at its peak ripeness to guarantee the best flavor. Our processing methods are tailored to the unique characteristics of each crop, utilizing both wet and dry methods to enhance their distinct profiles.

Wet Processing

This method helps us bring out bright, clean notes through fermentation, enhancing the beans' natural flavors. Wet processing involves fermenting and washing the beans, which highlights their crisp acidity and allows for a more defined taste. This approach ensures a more refined cup, free of any undesirable impurities.

Dry Processing

Coffee beans are processed using washed, natural, and anaerobic methods. In the washed process, the cherry is de-pulped, and the beans are cleaned for a smoother taste. The natural method dries the cherry intact, resulting in a fruitier flavor. Anaerobic fermentation, done in airtight tanks, creates distinct acids for a unique flavor profile, using either the whole cherry or washed beans.
